Colman's Mustard

I don't know about you, but I'm always hesitant to put strong flavored items into recipes that I'm serving to guests, for fear that someone may not care for that flavor, and mustard is one of those flavors I'm cautious with using. One time my husband made a batch of deviled eggs and went a little crazy with the mustard and the flavor was overpowering, and he almost didn't want to serve them (but did).

So when I make recipes, like Christmas Breakfast Casserole (link and photo below), I tend to go light on the mustard to err on the side of caution. If I know the people I'm serving love mustard, then I'll go all out!

I was sent some Colman's Mustard to review, and I love making breakfast casserole (idea I got from my grandmom who is an excellent cook and always stocked with recipes and full of ideas), so I figured I'd do that. I add mushrooms and spinach to my casserole, but the basic recipe is below:
